Ogbono soup which is also known as “draw soup” is one of the most popular soups in Nigeria. It is called draw soup because of its “slimy” texture and viscosity. It has almost the same consistency as okro and ewedu.
I like to make my Ogbono with leaf, but you can opt to not use any leaf. Also you can use any protein of your choice. These determine the flavor your soup will have.
So I’m sharing one of my methods for fool proof Ogbono Soup. This is the easiest one and you get a delicious pot of soup each time. This Soup is quick to make, requires very little effort and it’s perfect with any ‘swallow’ of choice. I hope you’ll try it out and leave your feedback. Enjoy!
Ingredients
250g Goat Meat
175g Pomo
120g Dried Fish
1/2 Cup Palm Oil
3 Tbsp Ground Ogbono
3 Tbsp Crayfish
1/2 Cup Uziza
3 Stock cubes
1 Tsp Salt
Directions
- Pour some palm oil in the pot on low heat, the aim is not for the oil to be too hot, just warm enough to melt the Ogbono.
- When oil is warm add in the Ogbono, mix well with the palm oil to form a smooth paste.
- Add a little water (Boiling) to the smooth paste. Then turn up the heat.
- Before it starts to boil, add in stock cubes, crayfish, salt and ground pepper(optional), stir continuously and allow to boil.
- Add in Pomo, Goat meat and dried fish, stir and allow to cook.
- Taste for seasoning and adjust accordingly.
- Leave to cook for another 7 minutes (uncovered).
- Your Ogbono soup is ready, enjoy!
